Happy birthday @elsiemanrad!! Who knew @cookinglight had so many delightful desserts?? I gave Laura a ton of options for her bday sweet and she picked banana pudding, starring her childhood favorite- Nilla wafters.
This is my kind of baking, because its more like assembly. Some technique involved but nothing scary like dough. The wafers, banana, and pudding are layered, then topped with meringue and baked briefly to brown.
You can serve warm, but i opted to chill. Even though this is not a dish from my childhood, i could taste the nostalgia 🍌
