Near disaster glazing the chicken too early (so the sugar burned), but crisis averted – Bittman’s simplest roast skillet bird with a twist on a family recipe for “Chanukah chicken.” The glaze is apricot preserves, Kraft Catalina dressing, and soy sauce. Made the jam and Catalina myself for a little special Passover twist.
